Saffron from Kashmir is unlike any other grocery store saffron you’ve tasted. It’s deeper in color, richer in aroma, and grown under conditions so specific that the entire annual harvest from Pampore, India's historic saffron heartland, amounts to just a few tonnes. If you have only ever cooked with dusty, supermarket saffron, you are working with a very different ingredient from the one the region has been growing for centuries. 


A Spice With Roots Going Back Centuries

Kashmiri saffron was brought to the Kashmir Valley by Persian traders in the 12th century AD. Pampore, a small district in Kashmir that became known as the saffron capital of the world, was where the crocus bulb found its most extraordinary growing conditions. The landscape, the soil, the altitude, the snowfall pattern, all came together in a way that’s almost impossible to replicate elsewhere.  Our saffron is grown by Raqib Mushtaq, a third-generation farmer and a dear friend. For him, this crop isn’t a commodity, it is a treasured inheritance.


What Actually Makes Kashmiri Saffron High Quality Saffron

Saffron is graded on three compounds: crocin, which produces color; safranal, which creates aroma; and picrocrocin, which delivers flavor. Kashmiri saffron is known for particularly high concentrations of these compounds, and it all comes down to terroir. The Karewa soil of Pampore, formed from ancient lake-bed deposits, provides a mineral character that other regions simply cannot replicate. The high altitude creates cold, dry conditions that concentrate these compounds in every stigma. Natural irrigation is the other piece of the puzzle. Saffron fields in Pampore rely entirely on monsoon showers in September, followed by snowfall starting in November, with slow-melting snow acting as a natural drip-irrigation system across the harvest season. This is just the landscape doing what it has done for centuries. 


What Kashmiri Saffron Tastes Like

Our saffron threads have notes of honey, raisins, and almonds. Real saffron from Pampore has a floral warmth and rich sweetness that you notice the moment you open the tin. Pure saffron threads from a quality harvest should be long, deeply crimson, and intensely fragrant.


How to Identify High Quality Saffron

Pure, unadulterated Grade A saffron shows itself through a few clear signs. Look for deep, dark red threads with no yellow bits mixed in, the yellow is the flavorless base of the stigma and its presence signals a lower grade. The threads should be trumpet-shaped, a sign they were hand-picked rather than machine-processed, which helps preserve their natural flavor and oil.
That oil is also what tells you a lot about quality. High-grade saffron feels soft and bends easily, while dry, brittle threads are a red flag. Try crushing a few strands between your fingers: real saffron will not stain your hand, since no artificial food coloring is involved. The real test happens in water or milk. Genuine saffron blooms slowly, releasing its color gradually rather than all at once, and unfurls an aroma of honey, almonds, and raisins as it steeps.


How to Use Saffron for Cooking

Pure saffron threads need to bloom before they release their full color and aroma into a dish. The method is simple: lightly crush a few threads and steep them in a tablespoon or two of warm water or warm milk for ten to fifteen minutes before adding the liquid to your recipe. This draws the crocin and safranal out into the liquid, distributing color and fragrance evenly throughout the dish rather than leaving it concentrated in one spot. Saffron shines in rice, milk-based desserts, tea, and baked goods. Use it in Samin Nosrat’s Persian-ish Rice, a delicate Kashmiri Kahwa or spiced saffron tea, gulab jamun, or a Moroccan Chickpea Tagine.  


A Few Practical Notes Worth Keeping in Mind

Less is more with high quality saffron. A few properly bloomed threads will season a dish for four people without needing a dramatic pinch. Store your saffron in an airtight tin away from heat and direct light. The saffron benefits you get from a fresh, properly stored tin from a traceable source are considerably better than anything you will get from a jar that has been sitting untouched in a drawer since last year. Raqib’s advice is to stop saving saffron for special occasions and use it more liberally to add floral depth and aroma to everyday meals!
