Kandyan Cloves are wild-harvested from Sri Lanka's lush forest canopy, handpicked just before they bloom and sun-dried for absolute maximum potency. These cloves are plump, deeply aromatic, and delivering powerful notes of pine, butterscotch, and allspice. Use them in masala chai, biryanis, holiday baking, slow-cooked meats, or anywhere whole cloves are called for and actually meant to be tasted.

Cooking tips

Brew a cup of ginger, cinnamon, and clove tea.

Add 1½ cups water and 1 cinnamon stick, broken in half, 8 to 10 cloves, and a couple slices fresh ginger in a saucepan, bring to a boil, cover, let steep for 10 minutes, strain, sweeten with honey, if desired, and enjoy.

Add to a pickling spice blend for root vegetables.

The warmth of cloves pairs particularly well with root vegetables, such as carrots and beets. Add 3 to 5 whole cloves to your pickling mix for the most aromatic pickled veggies.

Make a clove glaze for baked ham.

Instead of studding your ham with cloves, add ¼ teaspoon to ½ teaspoon ground cloves, depending on the size of your ham to the glaze.

Add warm depth to hot libations.

Add whole cloves to hot cocktails like mulled wine, hot buttered rum, hot toddies, and spiked apple cider.

Fragrant, earthy, and intensely flavored, these cloves are harvested from the Kandyan forest gardens of Sri Lanka, a diverse and canopy-rich ecosystem with native forest trees sharing space with mature nutmeg, jackfruit, and cinnamon trees.

They are picked and sorted for us by Ekoland, a community initiative that works with farmers and their families to grow food in a way that conserves the biodiverse forests and native flora of Kandy. The result is a highly productive landscape that also supports a wealth of wildlife.

Cloves are the dehydrated flower buds of the Syzygium aromaticum tree. Harvest is a short window: they have to be picked, by hand, when the bud has formed, but before the flower has developed.

Clove trees are tall evergreens, so harvesting is a delicate and cumbersome process. Once the buds are collected from the tree, they are gently dried to remove moisture, and intensify the flavors without losing any of their fragrant oils.
