Surya Salt is a solar-evaporated, earth-filtered Indian sea salt hand-pounded by the Agariya community of Gujarat, traditional salt-makers whose craft has been passed down across generations on the sun-drenched salt flats. Cooking tips

Swap in for kosher salt.

Use 1 teaspoon Surya Salt per 1½ teaspoons Diamond Crystal or ¾ teaspoon Morton’s kosher salt. And, remember to taste, and adjust salt, as needed!

Make a chilli-sumac rim for drinks.

Mix 1½ teaspoons sumac, 1 teaspoon powdered Guntur Sannam Chillies, ½ teaspoon jaggery, and ½ teaspoon sea salt.

Whip up salt-and-pepper seasoning.

Mix 2 teaspoons Surya Salt, 1 teaspoon ground white pepper, ½ teaspoon five-spice powder, ½ teaspoon granulated sugar, and ¼ teaspoon ground ginger, then use to season fried tofu, eggplant, prawns, pork chops, or even french fries.

Surya Salt comes from the Little Rann of Kutch, Gujarat, a low-lying strip of land that touches both ocean and desert. It is produced by the Agariyas, an indigenous community who have been harvesting salt for generations, and have a keen understanding of this unusual ecosystem.

Using solar pumps, the Agariyas harvest our bright, inland salt from the desert’s underground water table. For decades, diesel-powered pumps were the main way folks were able to harvest salt. Solar-powered units eliminate the need for diesel, benefiting salt workers, and the planet at large.

The briny groundwater is then channelled into box-like beds known as tambadas, where it evaporates slowly under the desert sun, leaving behind exquisite salt crystals. This process takes approximately 30-40 days.

The salt is then transported to a local women's self-help group, whose members hand-pound the salt to the perfect texture for everyday use. This is truly salt of the earth: solar-powered, earth-filtered, and hand-pounded.
