Cooking tips

How to brew the perfect cup of black tea

Steep 1 teaspoon black tea with 8 ounces just boiling water for 2 to 4 minutes. Enjoy black or add milk and the sweetener of your choice.

Make tea-infused, cream-based desserts.

Steep 1½ teaspoons black tea per 1 cup of hot milk or cream for 30 minutes to 1 hour, cool, and use in custards, ice creams, and more.

Try tea-infused shoyu eggs.

Use strongly brewed black tea instead of water in your favorite shoyu-marinated eggs.

Add to BBQ rubs & seasonings.

Use in place of ground coffee in spice blends for smoked meats.

This medium-strength, full-flavor black tea comes from Chota Tingrai, a family-run tea garden in Tinsukhia, Assam. It is located in the fertile valley of Brahmaputra, a major river that connects the lands of India, Tibet, and Bangladesh.

story_image

Chota Tingrai was the first tea estate to be owned and operated by an Indian family in independent India. Today, it is among the few that remain independently run; due to the heavy expense of maintenance, most tea estates today are owned and managed by corporate organizations.

story_image

The estate is certified organic, and also works with small tea-growers in Assam to improve their tea cultivation through natural methods. They prioritize closed-loop systems that use available resources to nurture biodiversity, boost soil fertility, and make delicious tea.

For Diaspora, Chota Tingrai makes CTC black tea, named after a processing method known as crush, tear, curl. It yields a medium-strength cup that pairs beautifully with our Chai Masala, but also makes a soothing cup of tea by itself.

Frequently Asked Questions

What are whole spices?

Whole spices are spices that have not been ground or processed. These whole spices retain their natural oils and flavor, making them more aromatic and long-lasting compared to pre-ground options.

Why should I use whole spices instead of ground spices?

Whole spices retain volatile oils, which means you get more flavor, freshness and aroma! Using fresh whole spices and grinding them when needed helps preserve their full aroma and taste.

How do I use whole spices in cooking?

Whole spices can be toasted, ground, or infused into dishes depending on the recipe. They are commonly used in techniques like tempering, making them essential for spice tempering and traditional cooking methods.

Are whole spices suitable for beginners?

Cooking with whole spices may seem intimidating, but that's far from the truth. Beginners can easily use whole spices, with just a little guidance. Filter our recipe section by spice to find recipes you can add to your everyday rotation!

How should I store whole spices?

Whole spices should be stored in airtight containers away from heat and light. Proper storage helps maintain the quality of fresh spices and ensures they stay flavorful for a longer time.
